french dip

Oh man, I used to love french dip when I ate meat. I'm psyched to have a vegan version.

wow. i am truly amazed. i thought everyone knew what it was. i look for any opportunity to dunk yummy bread into sauce, soup, broth, etc. this was super simple. saute mushrooms (i usually use white but portobello would be great), onions, garlic, or shallots in earth balance and olive oil. after a few minutes, add herb of choice (i like thyme) and some red wine and cook until the wine is absorbed. pile on a warm roll and top with cheese (or not) and dip into a bowl of warm broth with each bite.
