Chocolate Cupcakes



Adapted from a chocolate cake recipe in Hot Damn and Hell Yeah: Recipes for Hungry Banditos and the Dirty South Vegan Cookbook. This cookbook rocks by the way! As we poured the batter into the cupcake pan, we topped each cupper with a couple of pieces of dark chocolate which melted and got all gooey during baking. This made up for the "healthy" flavor that these had due to our use of white whole wheat flour.



Served with a sauce made of frozen cherries and some agave nectar.

The cupcakes look delicous. Just wondering, does anyone have tips for baking with carob? I usually have great success, but I recentely had trouble with it in a cake. I used carob powder, but I think carob chips would have worked better. Any suggestions that would help powder work just as well as chips? If so, please post them at www.delectablevegetable.blogspot.com

Mmmmm, cherry coulis. Cherries and chocolate go so well together, and your cupcakes look delicious. I love the name of the cookbook. That's too funny.
