yeah, me too... I can't figure out what to make for Thanksgiving. Any suggestions of vegan vegetable dishes (especially something with green vegetables) that are fun *and* that non-vegan meat & potatoes people might actually try? We're making a tofurkey, stuffing, gravy, mashed potatoes, sweet potato fries, cranberries, and apple pie so far, but want to add a couple more veggie dishes. I often do some green bean or stuffed squash dish, but want to try something new.
bazu - i'm also still trying to decide what to serve :) my problem is that most of the dishes need the oven so I'm trying to come up with stovetop or make-ahead items. stuffed mushrooms are definitely make ahead! good luck with your menu planning!
josh - your menu sounds great already! i am also looking for more veggie dishes that will appeal to everyone. The mushroom stuffing was SO amazing and I kind of threw it together. It basically consists of a base of whole grain seasoned bread cubes, TVP, gluten flour, shredded carrot, seasonings and spices. I will type it up and email it along with any interesting veggie dishes I find.

Josh, just off the top of my head, some veggies that are universally liked by all might be: asparagus, sauteed greens (kale?), (the green beans and squash you're already considering), broccoli, ... hmmm, I don't know if I can think like an omni! I just learned that broccoli comes out really good if you steam it, but use lemon juice and zest instead of water and throw a garlic clove in there as well. Just some random ideas.
It's great that you are making an effort to accomodate vegans. But, try something else besides mushrooms. Tofurkey is a good option. So are any veg grain meats. http://www.fieldroast.com/ As a vegetarian, I am tired of being served mushrooms. It's the generic meat subsitute. Vegetarians eat mushrooms countless times a year. Fake turkey feels more special.
For sides, serve the regular stuff but subsitute butter with olive oil and milk with soy milk. For example use soy milk in your mash potatoes.
