cookies for breakfast!
I baked breakfast cookies called Chickpea Coconut Oatmeal Cookies! They're definitely cookies and the coconut makes them sweet, but they're wholesome enough to not be too much like junk food.
Josh: The chickpea flour combined with the coconut and oatmeal gives maybe a nutty taste...the taste doesn't resemble hummus at all. Though I've had hummus for breakfast many times! They're nice and moist. The recipe calls for molasses but I used maple syrup and all was fine.
Bazu: me too! I bought chickpea flour to make pakoras and didn't know what to do with the rest. Pakoras are great, but way too greasy to eat often. What did you get chickpea flour for?

I've been looking for a way to use chickpea flour... those look really good. I love baked goods for breakfast.
