roots!
A very rooty veggie dinner: salad (romaine, bell pepper, cucumbers and turnips with a vinaigrette), oven-roasted potatoes, roasted beets served atop beet greens.
sorry, I know this isn't the focus of the post, but aren't beet greens great? I just started using them, and our local farmers market even gave us a whole bunch for free since other people weren't using them...
I love beet greens, since I can't get enough bitter greens to begin with.
I've heard that they inhibit magnesium absorption or something and certain people shouldn't eat too many of them? Sorry to be so vague, but I'm not sure exactly what I'm talking about!
Bazu- thanks for coming over to my blog! I always enough yr posts. This one is no exception. The potatoes look too good! I am a big fan of juicing and beet greens are one of my favorite things to juice. They make a awesomely greenish deep red. Sweet and leafy.
