yep, I made these, from a random inspiration. They turned out great! The only challenging part was keeping the pancakes together. Some rice flour might have helped. But if you let them fry till brown and crisp before flipping them, that keeps them together well. That and pressing them together hard with your hands before frying.
I forgot to mention that I mixed the rice with soy sauce, rice vinegar, rice wine, arrowroot, and a bit of sugar, before making the pancakes.
