Hi Carla,The spinach (and zucchini) are only in the cake part; the center is a separate batter that you put in before baking. Oh, and cool that we are both in Toronto!Ricki :)

I've made some awesome chocolate zucchini cupcakes. The Zukes make 'em nice and rich. But the filling of these, pardon the pun, takes the cake!
