Lime Cheese Cake


A perfect mix of tang and crunch. The nut, date and biscuit crust accompanied the tart and smooth inside of this Cheese Cake.

VeganCowGirl spent the afternoon in the kitchen, and this Lime Cheesecake was the sweetest recipe that made its way out of the oven.

Caribbean Vegetable Stew



From Moosewood Restaurant Cooks at Home
Saute 2 cups chopped onion in 2 Tbs veg. oil on med. heat for 4-5 min. Add 3 cups cooked cabbage and 1/4 tsp. cayenne and continue to saute stirring often until the onions are translucent.

Add 1 Tbs. grated ginger and 2 cups water, cover the pot and bring to a boil. Stir in 3 cups diced sweet potatoes, sprinkle w/ salt and simmer for 5 or 6 min. until potatoes are barely tender.

Add 2 cups tomatoes, 2 cups okra, and 3 Tbs. lime juice. Simmer until all the veggies are tender, about 15 min. Stir in cilantro and add more salt to taste.

Sprinkle the stew w/ chopped peanuts adn top w/ a few sprigs of cilantro.
