yum! i have made a vegan baked ziti using pasta sauce, ziti noodles, and crumbled tofu (in place of ricotta). throw n plenty of garlic, herbs and olive oil in there somewhere too (with the sauce or tofu). i like the idea of a "cheese" sauce on top though.
the spaghetti squash was a nice addition too... it added some vegetable-y substance, so it didn't feel like you were just eating pasta
