Bean burgers from Vegweb.com (recipe here) with tomato and avocado with white asparagus and hollandaise sauce. And a little pickle! This is a flashback to last spring, I thought any fellow cold-weather inhabitants who are freezing would enjoy it!

Homemade tofu "fish" stick. Recipe from Shmooed Food. I didn't use the kelp granules, so they actually taste a lot like the Zoglo's cutlets. The tartar sauce is just nayonnaise with a wee bit of relish mixed in.

Tomatoes stuffed with arborio rice, garlic, mint, basil, and parsley, then baked on top of a layer of sliced potatoes, seasoned with salt, pepper, and olive oil. The potatoes soak up the tomato juices, for an extra rich flavor.
