what on earth is zchug?
It's delicious!!!!!! The cookbook says it's a Yemenite chili sauce that has become Israel's national seasoning...eat it with rice, couscous, soup, falafel, etc. Apparently, in Israel there are green and red zchugs typically served at falafel stands. Green seems to be hotter and is everything but the tomatoes. Red has tomatoes added to tone down the heat, I guess.Zchug5-8 garlic cloves2-3 medium hot chilies, such as jalapenos5 fresh or canned tomatoes (I used one 15 oz can diced tomatoes)1/2 cup cilantro1/2 cup fresh parsley2 tbsp extra virgin olive oil2 tsp ground cumin1/2 tsp turmeric1/2 tsp curry powderseeds from 3-5 cardamom pods (or 1/4 -3/4 tsp ground cardamom)juice of 1/2 lemonpinch of sugar, if necessarysaltPut all ingredients except the sugar and salt in a food processor orblender.
