mashed potato martinis


One of the appetizers at Josh & Renate's wedding! (last month in Baltimore)
Mashed purple potatoes with caramelized onions, sautéed mushrooms, olive oil, fresh chives and scallions (not pictured: vegan tofu aioli), served in martini glasses during the cocktail hour.

Since I read this a couple of weeks ago I have been thinking about them and awaiting the different colored potatoes to come to the market.
