panini, frittata, polenta

Sorry for the hiatus!


Farmhouse Panini: walnut-lentil pâté, rosemary aïoli, italian ciabatta, mesclun salad.


New Potato-Chive Frittata: tofu, smoked tomato jam, spinach salad, whole grain toast.


Creamy polenta with greens, caramelized onion, and grilled tofu.
All from Counter in NYC.

The panini looks amazing and the lump thing in the second photo is a fritata? Looks more like a sweet potato mash to me.

The panini was the best of the three! Yeah, the frittata was oddly small, but super tasty. I don't think any sweet potato was harmed in its making :)

Oooh, all of this looks delicious! I can't believe I've only just begun exploring this area of your blog (having visited for the wordles.)

I too am vegan, have been since about 1984 and these recipes look fantastic.
