tempeh and mushroom sandwich


tempeh baked in honey-mustard marinade, roasted mushrooms and red onions, and sprouts on a ciabatta roll

How come this is cooked in a honey marinade? I thought this was what vegans eat!

you know, I tried cooking tempeh, and it tasted horrible. So I see it on menus, and I'm tempted to try it (they must know what they are doing) but I still remember my sad attempt.

Reassure me that it tastes good. I wonder what I did wrong?

Try marinating it and baking it until it's well browned on the outside (for around 15 minutes). I think that's most reliable way to cook it and have it taste good, since baking makes the texture tougher and more "meaty", and marinades complement the tempeh taste with other flavors. When I've sauted or stewed it I haven't liked the taste as much.
