Ceviche



Canned hearts of palm sliced and masquerading as "calamari", avocado, red onion, cilantro, and loads of lime juice.

I'd always wondered how one would replicate seafood ceviche. I posted a mushroom ceviche a while ago, but this one looks like a great variation!

I was trying to think of other vegetables that would have a ceviche-ish texture, and came up with tofu. Your idea of mushrooms is excellent!

very intriguing! i've seen palm hearts in the store but never really had the desire to eat them - now I might have to buy some and give it a try! and if they work for ceviche, might they work for fried calamari? :)
