Mediterranean zucchini boats


More wedding food: zucchini stuffed with tomato, onion, parsley, and raisins.

Joanne, they were made by a caterer so I'm not sure exactly what the ingredients were (besides that it was vegan). I imagine there was some olive oil, and there might have been some other herbs like oregano or basil. Not a ton though, I don't think.

Thanks for the follow up...just thought the simplicity really appeals to me, so thought there must be a recipe out there for it...I have contacted the Kitchen and hoping they reply, even if's to say they decline my request...thanks again..
