lotus roots with sesame


fried lotus root slices with soy sauce, vegetarian oyster sauce, sesame oil, and toasted sesame seeds, over jasmine rice

i like lotus root soup. just simply lotus root boiled for a long time (until soft) in veg stock.

I'm actually not sure what the best method is, but what I did was steam the lotus root slices for 5 or 10 minutes, then fry them in a bit of oil over medium heat for 10 more minutes, stirring and flipping occasionally. I added the soy sauce and veg oyster sauce as the lotus roots were frying, and then added some sesame oil at the end. The lotus roots should still be fairly crunchy when done (unlike potatoes, they're ready to eat before they get soft), but not taste too starchy or raw.
