BBQ Seitan Sandwich, Collard Greens & Baked Yam

The BBQ seitan sandwich uses the Vegan With a Vengeance recipe for seitan, the BBQ sauce is modified Annie's Original Recipe--add chili oil, agave nectar, and some tamari. The Collard Greens are simmered in vegetable broth with liquid smoke, thyme and some onion, a little liquid smoke, red pepper flakes and salt & pepper.

Mmmmm...collard greens...drooool! I love greens, and especially combined with yams or sweet potatoes. Yum.
