enchilatzah casserole


matzahs softened in water and layered with enchilada sauce, potatoes, black beans, and MSF Chik'n Strips. topped with homemade cheese sauce and olives.

how much water do you use to soften the matzoh? I've never tried that and it sounds treacherous...

josh - it CAN be treacherous (my first attempt was!) just dunk them in a dish of hot tap water for 5 seconds, then flip and repeat. They don't feel really soft at first, but as they sit, they will soften.
