I actually like this better with the noodles still slightly warm.8 ounce package soba noodles, cooked and rinsed with cold water1 large cucumber1 tablespoon light olive oil2 teaspoons sesame oil1 tablespoon rice vinegar2 tablespoons soy sauce2 tablespoons toasted sesame seedsCut cucumber into 2" by 1/4 in strips (or close to that). Put everything in bowl with noodles and toss to combine. Top with Cilantro Sauce and scallions.Cilantro sauce:3/4 cup cilantro leaves2 tablespoons nut butter1 tablespoon lemon juice or rice vinegar pinch of salt1/4 cup waterPut everything in food processor and process until fairly smooth.
