cachapas with mango and guayabita


Venezuelan cachapas (corn pancakes) with fresh mango slices and guayabita powder (allspice, as far as I can tell). I bought the cachapas pre-made from a supermarket here in Caracas, but there are several recipes for them online.

want a quick and easy recipe with mango? this comes from my coworker.. i made it for dinner today and it's delicious!

mango, cilantro and black beans over quinoa:
-saute 1 medium onion, chopped
-add a can of rinsed and drained black beans and a bit of veg stock (should be slightly stewy but not too much liquid)
-toss in a bunch of chopped cilantro (i used about half a cup, but have used more in the past - i'd say do it to taste.. i like lots!)
-toss in a bit of chili of some sort (i used habanero chili sauce, but you can use cayenne pepper, fresh jalapenos (prob best bet), or whatever else to spice it up)
-toss in some cubed (or sliced however) fresh mango (make sure it's not too ripe, but firm yet sweet)

serve over quinoa with a squirt of fresh lime juice

oh, i used one mango. i also threw in some fake chicken i had leftover in the fridge.

I'll be the cachapas would be great with cachaca (Brazilian sugar cane alcohol). They look exotic and delicious.

hmm, you mean using cachaca as a kind of syrup? could be interesting. Cachapas are usually fried with cheese and/or ham on top, so sugar cane alcohol certainly sounds more appealing than that...
