seitan stew, turnip greens, biscuits & gravy



on the comfort food note...
- seitan stew with potatoes, turnips, carrots, celery, etc.
- southern style turnip greens, cooked forever with onion, chili flakes, garlic, and margarine
- homemade biscuits with gravy

You know, I've never had turnip greens. Where have I been all these years?

I'd never made them either... I only made them because we had the extra greens from the turnips in the stew. They were really tasty though. I think the secret is cooking them to death... I sauteed them for around 40 minutes total

Biscuits (from The Compassionate Cook-- a cookbook I find v. hit or miss, btw. Beware.)
2 cups flour
1 Tbs. baking powder
1/2 tsp. salt
4 Tbs. margarine
3/4 cup soy milk

Mix dry ingredients. Cut in margarine w/ fork or pastry cutter. Add wet ingredients. Knead for a minute or two. Roll out, cut biscuits using a drinking glass. Bake at 450 for 10-12 minutes.

The Seitan Stew was from a recipe in the Balitmore Sun.

The turnip greens are from a Debroah Madison cookbook, Vegetarian Cooking for Everyone.

The gravy is some recipe I found on line.
