potato & onion frittata


sliced potatoes, lots of onions, silken tofu, arrowroot, tumeric, salt, pepper, rosemary, chives, and way too much oil... but well worth it!

How do you get the tofu to stick so well? Mine's all crumbly still...

it was really good!
a couple tablespoons of arrowroot and of oil helped the tofu stick together for me. and processing it till it's smooth in a blender. It's still not as solid as eggs, but it held up ok.
