acorn noodles with pistachio sauce


Acorn noodles with fried tofu, stir-fried bok choy, mushrooms, and carrots, topped with Asian pistachio sauce.

Not familiar with acorn noodles (they look sort of like soba, to me), but that sauce sounds divine!

this looks really delicious. we just read up on acorns (as food for people) last fall. there's not a whole lot of info on it. i'm intrigued by the acorn pasta. where did you get it and can you give me an idea of what it tastes like?

Acorn noodles!? I had to Google them. So vegans eat "rabbit food" and now squirell food too.

I'm mildly obsessed with trying out random new asian noddles - whatever I can find in shops. The acorn noodles are indeed somewhat like soba noodles. But, true to form, while (buckwheat) soba noodles taste kind of wheaty, the acorn noodles tasted a bit nutty, in a mild, aromatic, slightly smoky way. I actually got them at a Korean grocery store, and I've only seen them on the menu at a Korean restaurant.

The pistachio sauce was definitely the highlight of the dish though - one of the tastiest sauces I've made...
