kinpira gobo


Braised burdock root and carrot, with fried tofu. Adapted from this recipe.

what does burdock root taste like? it looks good, i'm just suspicious of veggies i've never tried.

it has a really distinctive taste. the texture is somewhat similar to ginger root, but the taste is much more subtle, very earthy and savory. It's in sushi sometimes, so you might know it as one of the less recognizable but tasty sushi roll fillings.
