roasted cauliflower with ancho chili sauce


Roasted cauliflower, tomatoes, and yellow pepper with black beans and pinto beans, topped with ancho chili sauce and crushed tortilla chips.

cauliflower never gets enough love. perhaps because it is so pale. i still like it though. have you ever tried the purple or orange kind? the purple really brightens a dish.

I learn so much here ... I'd never heard of ancho before.

Jen: I tried the orange kind this fall and it was pretty good... of all the weird variations I prefer brociflower though.
Carla: ancho just means wide in spanish - wide chili peppers. You can get them dried and then use them whenever - they have a smokier and more savory taste I find, and not so sharply spicy.
