kim chee banh mi
Hybrid Korean-Vietnamese banh mi sandwich, filled with kim chee (red hot pickled cabbage and chili), along with the usual pickled carrot, daikon, and cilantro. A great combo! From Viet Sub in Vancouver.

korean pancakes & appetizers
Pancakes from the Korean vegetarian restaurant HanGawi: kimchi mushroom, leek, and pumpkin (from left to right).
And an appetizer platter too: stuffed and fried shitake mushroom, grilled spicy rice cakes, and barbecue tofu. All absolutely amazing!

mongo guisado, lumpia & banana sauce
A Filipino mini-feast, with veganized versions of:
- Mongo guisado: thick mung bean soup with homemade faux pork (marinated and crumbled tofu, broiled till chewy and almost crisp)
- Lumpia: Fried spring rolls stuffed with carrot, onion, faux pork, scallions, cabbage, pepper, soy sauce, garlic powder
- Banana Sauce, purchased in Jackson Heights, New York

Malaysian curry noodle soup
Since people liked the previous posts, one more from Happy Buddha vegetarian restaurant (Flushing chinatown in New York). A rare vegan version of Malaysian curry (usually it has shrimp paste).

Fabulous vegan salads from the buffet at Cassius Garten Restaurant in Bonn, Germany:

From left, red cabbage salad, Russian salad with mushrooms and brussel sprouts, carrot and sunflower seed salad, radish salad, cucumber salad, corn salad, mushroom antipasta, roasted tofu, and German potato salad in the middle, all vegan (with clear labels to boot) and all amazingly flavorful.

Carrot orange fennel salad, more corn salad, green bean salad, spinach salad, and potato arugula salad.
Best vegan salad buffet ever?

Senegalese vegetable stew with "fish" balls
A veggie adaptation of tart vegetable stew with fish balls, from the sultry Seductions of Rice cookbook. Fishballs made of tempeh, parsley, scallion, garlic, cayenne, and salt. Stew packed with daikon, carrots, tomatoes, cabbage, and onions, in a vinegar, tamarind, garlic, and chili sauce.

Caribbean Vegetable Stew

From Moosewood Restaurant Cooks at Home
Saute 2 cups chopped onion in 2 Tbs veg. oil on med. heat for 4-5 min. Add 3 cups cooked cabbage and 1/4 tsp. cayenne and continue to saute stirring often until the onions are translucent.
Add 1 Tbs. grated ginger and 2 cups water, cover the pot and bring to a boil. Stir in 3 cups diced sweet potatoes, sprinkle w/ salt and simmer for 5 or 6 min. until potatoes are barely tender.
Add 2 cups tomatoes, 2 cups okra, and 3 Tbs. lime juice. Simmer until all the veggies are tender, about 15 min. Stir in cilantro and add more salt to taste.
Sprinkle the stew w/ chopped peanuts adn top w/ a few sprigs of cilantro.
