Caribbean Vegetable Stew

From Moosewood Restaurant Cooks at Home
Saute 2 cups chopped onion in 2 Tbs veg. oil on med. heat for 4-5 min. Add 3 cups cooked cabbage and 1/4 tsp. cayenne and continue to saute stirring often until the onions are translucent.
Add 1 Tbs. grated ginger and 2 cups water, cover the pot and bring to a boil. Stir in 3 cups diced sweet potatoes, sprinkle w/ salt and simmer for 5 or 6 min. until potatoes are barely tender.
Add 2 cups tomatoes, 2 cups okra, and 3 Tbs. lime juice. Simmer until all the veggies are tender, about 15 min. Stir in cilantro and add more salt to taste.
Sprinkle the stew w/ chopped peanuts adn top w/ a few sprigs of cilantro.
