Many margarines do not have whey and are indeed vegan. Most grocery stories carry a vegan margarine nowadays (even if it's not labeled vegan) - just check the ingredients list.
sourdough starter is a living creature that you are exploiting for your selfish ends. you might as well put bacon into your bread if you're going to use sourdough starter.

I've always wished I could make homemade bread that was as crispy and delicious as yours looks!
